The colorful Vegetable Salad with Soft Boiled Egg

Vegetable salad can be quite boring. The only way we can make these vegetable salads interesting is with the right mix of ingredients that have different colors, textures, and tastes. They can become even more tempting when some of the ingredients are homegrown.

Ingredients

Purple Cabbage: 1/2 cup shredded

Capsicum:1 cubed

Tomatoes: 2 cubed

Eggs: 2 soft boiled/hard boiled *as per choice

Mixed herbs: 1 Tsp

Lime juice: 1 tbsp

Microgreens: Handful

Salt: as per taste

Procedure:
  • Take the shredded cabbage, cubed capsicum, and tomatoes in a bowl.
  • Add the lime juice, mixed herbs, and salt.
  • Toss in the microgreens and mix the salad properly.
  • Serve the salad with soft-boiled eggs.
  • The crunch of the cabbage and capsicum, the tanginess of the tomatoes, and the soft-centered eggs make a refreshing salad.
