Shakshouka with an Indian touch

“Shakshouka” literally means “mix of all”. Though the origin of the dish is not very clear, they say it’s from Arabic cuisine and is served in a cast-iron pan.

It made with simple easily available ingredients and is quite close to an egg bhurji or a “Papeta par eda” a Parsi egg delicacy.  So here is my version of a classic Shakshouka using the ingredients I had.

Ingredients:

Onion:2, finely chopped
Red pepper:1, finely chopped
Capsicum:1, finely chopped
Canned tomato puree:1/2-1 cup (I’ve used a puree of 3 roasted tomatoes)
Cumin powder:1/2 tsp
Garlic: 3-4 cloves
Chilli flakes:1tbsp
Eggs:4
Coriander
Salt.

Procedure:

• Heat oil in a pan ( preferably a cast iron pan) saute onions till light pink.

• Add in capsicum, red peppers, and saute nicely.

•Add in the garlic, cumin powder, chili flakes, salt. Cook till done

•Make 4 holes in the gravy and pour in the 4 whole eggs.

•Put the gas on medium flame and place a lid on top so the eggs cook properly.

•Lastly, sprinkle salt, pepper, coriander and serve hot.

•Serve it hot with some whole wheat bread or chapati and it’s a match made in heaven.

Note:

For a vegetarian version, you can easily replace the eggs with chickpeas.
