Lal bhoplyacha Bharit is a super simple, easy, and high fiber- low carb dish to make. It can be made as a main course, a side dish, a snack, or a dip, and even during fasting.

As for me, this dish is a perfect summer dish. The color represents summer and the cooling effect of a red pumpkin teamed with curds makes it perfect for the season.

Serve it with hot steaming rice and varan or freshly made Chapatis to enjoy it better.
