Summer means a house full of homegrown mangoes which tend to get over quickly. So this time before all the homegrown mangoes were over, I knew I had to try a salad with mango.
The first thing that struck me was the Mango salsa. If you go through the recipe it’s quite similar to the classic Mango Salsa but I’ve used local ingredients and hence the name Mango cucumber salad.

Ingredients
- 1 large Mango finely cubed
- 1 large Cucumber finely cubed
- 1 large Capsicum finely cubed
- 1 medium Onion finely cubed
- 1-2 tsp Lemon juice
- Salt
- Mixed Herbs *optional
