Aakur/ Ankur

Ankur are tender shoots of a fern that are edible. They are long and slender, and look quite similar to asparagus. It is like the “desi asparagus”.

Availability

Ankur is a hyperlocal and seasonal vegetable. It is mainly available during monsoons like moras, takla etc. It has to be prepared and consumed fresh, just like any leafy green, hence is available for a short period.

This fern grows in marshy areas, mangroves, riverbanks or salt marshes. With more and more land undergoing construction and urbanisation, the availability and demand for this seasonal produce are reducing.

Collecting this fern is an art. First comes the right identification, and then comes picking it up at the right time from the areas where it grows.

Nutritional & Health Benefits

Some research suggests this vegetable is a rich source of fiber, vitamins, and minerals. It relieves constipation and gastric issues but there is not much research/studies available to support these claims.

It is said that different parts of this fern when it grows has been used to cure Traditionally, it is used to treat ulcers, boils, wounds, snakebites, bleeding, and worm infestation across the globe. The leaves are used to make lotions and creams for various skin ailments. The leaves are also used in the treatment of haemorrhoids, gastritis, dysentery and hernia.
