Watermelon Rind Dosa also known as Kaligana/ kalingada Polo is a simple soft dosa recipe made with the white rind which is usually discarded by most.
Most often, when we buy fruits and vegetables, there are a lot of parts of the fruits and veggies that we discard. This increases the burden of food wastage. Our ancestors, on the other hand, had some fantastic regional and classic ways of reducing food wastage. Making Kalingada polo is one great way to reduce food wastage.
Generally, when we buy a watermelon, the largest wastage is through the peel. The rind makes for almost 20-40% of the watermelon. Utilising the rind makes a lot of sense.
Watermelon rind isn’t just edible, it is also rich in dietary fibre, vitamin C, potassium, L-citrulline, lycopene, carotenoid and phenolic compounds. It has both antioxidant, antibacterial, antidiabetic and hepatoprotective properties.
That is when I remembered the rind dosa, grandmother’s dosa recipe. She always knew how to reduce food waste and maximise use of whatever we had. Somehow she still managed to make it into a comfort food.

This watermelon rind dosa recipe is simple, easy to make, and perfect as a breakfast or snack recipe.

Dosa with Watermelon Rind ( Kalingada Polo)
Equipment
- Mixer
- Non-stick pan
Ingredients
- 3/4 cup Rice
- 1/2 cup Poha
- 1 cup Watermelon rind
- 1/2 cup Urad dal
- 1/2 tsp Methi seeds
- 1/2 tsp Salt
Instructions
- Soak rice, urad, methi for 4 hrs.
- Grind it to a somewhat thick paste with watermelon rind and poha.
- Let it ferment for 8-10 hrs.
- Add salt and mix it nicely.
- Heat pan till it's very hot. Add oil and pour the batter. Don't spread it like regular dosa.
- One the dosa leaves edges, flip it over and let it cook.
- Serve hot with a chutney.
