An easy Chickpea Salad recipe

Chickpeas also known as Garbanzo beans/chole or Kabuli Chana are originally from the Mediterranean and the Middle East but now is an integral part of Indian Cuisine. It is a rich source of fibre, protein, and many other nutrients like iron, magnesium, zinc, selenium, phosphate, etc.

Apart from consuming plain boiled chickpeas with a dash of salt, and hummus, chickpea salad is a favorite at my place. It is simple and super easy to make. Plus you can add in a variety of vegetables to make it more colorful to make it appealing to the eyes.

Especially in the case of kids, they can be involved in the making process. Let them choose the vegetables that they like and let them whip up their personalized salad.

Chickpea Salad

Ingredients:

Chickpeas- 1 cup, boiled

Capsicum- 1 medium, cubed

Carrots- 1 big, cubed

Cucumber-1 medium, cubed

Tomato-1 large, cubed

Lemon- 1/2

Coriander- a handful, finely chopped

Salt- as per taste

Chaat Masala-1/2 tsp

Procedure:

  • Toss the boiled chickpeas, capsicum, carrots, cucumber, and tomato in a bowl.
  • Add in the salt, chaat masala, coriander and mix it.
  • Garnish it with coriander.
  • Serve it slightly warm or chilled. Follow it up with pasta in pesto/arrabiata or a traditional Indian meal.
