Ingredients

For the Ragi pancake

  • 100 gms Ragi Flour                  
  • 20 ml Melted butter                
  • 1 Eggs
  • 300 ml Milk                          
  • 2 tbsp Sugar
  • 1 pinch Salt                           
  • 1 pinch Baking Powder
  • 1 pinch Cinnamon Powder

For the fruit stuffing

  • 1 Plum Chopped
  • 1 Banana Chopped
  • 1 Kiwi  Chopped
  • 10 gms Brown Sugar
  • 10 gms Grated Coconut
  • 1 pinch Cardamom Powder
  • 2 tbsp Clarified Butter

Instructions

  • For making the pancakes, mix all the ingredients for the pancake and whisk until a smooth batter is formed with no lumps.
  • Pour one ladle full of batter into a non-stick pan and swirl around the batter to spread evenly.
  • When cooked through fully, remove the pancake carefully from the pan and set aside.
  • For making the stuffing, chop the fruits and set aside.
  • In a pan, heat the ingredients along with fruits and clarified butter until the sugar is just melted.
  • For assembling the pancake, take one sheet and place the filling in the centre and roll.
  • lightly toss the rolls in butter and remove.
  • Cut and serve along with some fresh cut fruits and orange cream.
  • Serve it for breakfast or snack. Plus it would be an instant hit with both adults and kids.
