As a kid, every summer we would travel to my hometown for vacations. The good part of going back home was the travel, meeting the rest of the family, working on the farms/ land, and the food but looking after the mango trees, waiting for the mangoes to fall, or climbing up on the trees to pluck raw mangoes(Kairi) when we thought no one was looking was the best part. The mere thought of Kairi with a dash of salt and chili powder makes me drool.
Yes, as compared to ripe mangoes, I love Kairi for their taste and amazing colour. Raw mangoes also are rich in vitamin C, dietary fibre, and many other vital nutrients.
So today when I went for my weekly grocery shopping and saw the raw green mangoes nostalgia hit. I had to buy them. Back home I kept on thinking about what new can be made from these. I ended up making Raw Mango rice.
Raw Mango-1, medium *adjust as per preferance
Fresh Grated Coconut- 3/4-1 cup
Green chillies-2-3
Jaggery-1-2 tbsp
Peanuts- handful
Mustard seeds-1 tsp
Curry leaves- few
Oil-1 Tsp
Rice- 1 cup
Water-2 cups
Salt- As per taste
