Quick Egg Bites Recipe

My latest obsession is trying out the different recipes on my cast iron paniyaram pan. The paniyaram pan also known as appe pan, is mainly used to make paniyaram/appe.

One of easiest and quickest recipe you can make on a paniyaram pan is- Egg bites. A dash of protein from eggs and complex carbs from oats, it makes for a quick snack or breakfast option.

Ingredients:

Eggs-2, whole

Onion-1, medium size/finely chopped

Tomatoes-1, medium size/ finely chopped

Rolled oats-3 tbsp

Black pepper-1 tsp

Green chili-1, finely chopped

Salt- as per taste.

Oil-1-2 Tsp

Procedure:
  • In a bowl, break in the 2 eggs and beat it till it fluffs up.
  • Add in the finely chopped onion, tomato, green chili and lastly the rolled oats. Mix properly and leave it aside for a few minutes.
  • Heat the paniyaram pan on medium flame, pour the oil and make sure it covers up every cup properly.
  • Once the pan has heated properly, pour in the egg batter and fill the 3/4th of the cup. Cover it with a lid and let it cook for 3-5 mins.
  • Flip the egg bites once done and let it cook for a while.
  • Serve hot with homemade ketchup or chutney for breakfast, kids tiffin or as a snack.

  1. Awesome recipe Aditi and healthy too. My family loved it and the best part was my son (9 years old) who doesn’t prefer having eggs, had it without any fuss as he couldn’t guess that it was made of egg
