Ragi Fruit Pancake Roll by Chef Gaurav Bansal

Ragi/Nachni is also known as finger millet is grown widely in India. It has been an integral part of Indian cuisine. Some of the famous dishes using Ragi include Ragi mudde, Nachni Bhakri, Shirvale, etc. Nutritionally speaking, it is a good source of carbohydrates, calcium, potassium, and other nutrients.

One of my favorite Sous Chef and a dear friend Gaurav Bansal was kind enough to share one of his amazing recipes using Ragi/Finger millet.

Ragi Fruit Pancake Roll

For the Ragi pancake

Ragi Flour:                      100 gms

Melted butter:                 20 ml

Eggs:                               1no

Milk:                                300 ml

Sugar:                              2 tbsp

Salt:                                 1 pinch

Baking Powder:               1 pinch

Cinnamon Powder:          1 pinch

 

For the fruit stuffing

Plums:   1 no

Banana: 1 no

Kiwi       1 No.

Brown Sugar: 10 gms

Grated Coconut: 10 gms

Cardamom powder: 1 pinch

Clarified Butter: 2 tbsp

Method:

1) For making the pancakes, mix all the ingredients for the pancake and whisk until a smooth batter is formed with no lumps.

2) Pour one ladle full of batter into a non-stick pan and swirl around the batter to spread evenly.

3) When cooked through fully, remove the pancake carefully from the pan and set it aside.

4) For making the stuffing, chop the fruits and set them aside.

5) In a pan, heat the ingredients along with fruits and clarified butter until the sugar is just melted.

6) For assembling the pancake, take one sheet and place the filling in the center, and roll.

7) Slightly toss the rolls in butter and remove.

8) Cut and serve along with some fresh-cut fruits and orange cream.

Serve it for breakfast or a snack. Plus it would be an instant hit with both adults and kids.

Ingredients

For the Ragi pancake

  • 1 pinch Baking Powder
  • 1 pinch Cinnamon Powder

  • 1 Plum Chopped
  • 1 Banana Chopped
  • 1 Kiwi  Chopped
  • 10 gms Brown Sugar
  • 10 gms Grated Coconut
  • 1 pinch Cardamom Powder
  • 2 tbsp Clarified Butter

Instructions
